EU system of PDO/PGI The EU schemes encourage diverse agricultural production, protect product names from misuse and imitation and help consumers by giving them information concerning the specific character of the products

Protected Designation of Origin (PDO)
PDO covers agricultural products and foodstuffs which are produced, processed and prepared in a given geographical area using recognized know-how.

Protected geographical indication (PGI)
PGI emphasizes on the relationship between the specific geographic region and the name of the product, where a particular quality, reputation or other characteristic is essentially attributable to its geographical origin.

Octopus with PDO/PGI wine

Ingredients

• 1 octopus around 1 ½ kg (cut into bites)
• 1 cup olive oil
• 10 medium dry red onions, quartered
• 1 tbsp of sugar
• 1 large ripe and firm tomato
• 1/2 cup White wine
• 1/2 cup balsamic vinegar
• 1/2 cup cognac
• 1 bay leaf
• 4-5 allspice grains
• 1 tbsp thyme honey
• plenty of freshly ground pepper

Instructions

• Heat the oil in a saucepan and add the onions.
• Leave them on a low heat for 30’ until they are well softened and slightly dissolved.
• Sprinkle with sugar and mix.
• Add the octopus.
• Let it change color for a few minutes.
• Add the liquids and herbs.
• Let it boil on medium heat, until the octopus softens.
• The food will release a lot of juices, so when the octopus is well softened, increase the heat and boil vigorously for a few minutes until the sauce thickens.
• Add honey and pepper.
• Mix well.

Green beans with olive oil

Ingredients

• 500 gr green beans fresh, rinsed, ends trimmed
• 1/2 tbsp salt
• 2 tbsp olive oil
• 6 cloves garlic minced
• 1 tbsp lemon juice freshly squeezed
• 1/2 cup Parmesan cheese grated

Instructions

• Bring a large pot of water to boil, add green beans and ½ teaspoon salt. Cook on medium-low heat for 5 minutes, drain the beans.
• Heat olive oil in a large skillet on medium heat. Add minced garlic and cooked green beans.
• Saute on medium heat for about 2 minutes to combine all ingredients.
• Remove from heat. Add freshly squeezed lemon juice and stir. Add grated Parmesan cheese and stir. Taste and add more salt, if needed.
